Cobbler with Pecan Pie
Components:
Regarding the topping:
- One cup of all-purpose flour
- Half a cup of sugar, granulated
- Two tsp baking powder
- One-fourth teaspoon of salt
- Half a cup of melted unsalted butter
- Half a cup of milk
- One teaspoon of vanilla extract
Regarding the Filling:
- One cup of pecans, chopped
One cup of light corn syrup
One cup of packed brown sugar
1/4 cup melted unsalted butter
Two huge eggs
One teaspoon of vanilla extract
One-fourth teaspoon of salt
Instructions:
- Set the Oven’s Temperature to 350°F (175°C). Butter or grease a 9 x 13-inch baking pan.
- Make the topping by combining the flour, baking powder, granulated sugar, and salt in a medium basin. Pour in the milk, vanilla essence, and melted butter. Mix the batter until it’s smooth and well blended.
- Make the Filling: In a another dish, whisk together the melted butter, eggs, corn syrup, brown sugar, chopped pecans, vanilla extract, and salt until smooth and thoroughly blended.
- To assemble the Cobbler, fill the baking dish with the topping batter. After that, carefully pour the pecan filling on top, spreading it evenly. The topping will rise to the top while baking, so avoid stirring the layers together.
- Bake: Bake for 45 to 50 minutes in a preheated oven, or until the filling is bubbling and the top is golden brown.
- Cool and Serve: Before serving, let the pecan pie cobbler cool for a few minutes. It tastes great by itself or with a dollop of whipped cream or vanilla ice cream.
