Cod with Lemon Butter Sauce and Tomato

Ingredients

  1. 4 fish fillets, each weighing roughly 6 ounces
  2. To taste, add salt and pepper.
  3. Two teaspoons of olive oil
  4. One little onion, chopped
  5. Two minced garlic cloves
  6. One 14-oz can of drained diced tomatoes
  7. One lemon’s juice
  8. One lemon’s zest
  9. Four tablespoons of butter without salt
  10. Chopped fresh parsley (for garnish)

Directions

  • Cod Preparation: Sprinkle salt and pepper on the cod fillets.
  • To sear the fish, heat the olive oil in a big skillet over medium-high heat. Cook the fish fillets for 3–4 minutes on each side, or until they are cooked through and golden brown. Take out and place aside from the skillet.
  • Create the sauce by adding the onion to the same skillet and cooking it for three to four minutes, or until it becomes transparent. Add the garlic and sauté until fragrant, about 1 minute more.
  • Add Tomatoes: Include the lemon zest, juice, and diced tomatoes. Simmer for approximately five minutes after stirring to blend.
  • Add the butter and stir until it melts and the sauce is smooth. Turn the heat down to low to finish the sauce. To taste, add salt and pepper.
  • Mix: Spoon the sauce over the fish fillets and return them to the stove. Cook until well heated, about 2 more minutes.
  • Serve: Top with fresh parsley and serve hot, ideally over rice or with crusty toast.
