Cookies with Lemon Blossoms
Ingredients
Regarding the Cookies:
- One cup of softened unsalted butter
- One cup of sugar granules
- Half a cup of powdered sugar
- Two huge eggs
- Two tablespoons of lemon juice
- One lemon’s zest
- Three cups of all-purpose flour
- One teaspoon of baking powder
- Half a teaspoon of salt
Regarding the Lemon Glaze:
- One cup of powdered sugar
- Two tablespoons of lemon juice
- One tablespoon of optional lemon zest
Directions
Preheat Oven:
- Set the oven’s temperature to 350°F (175°C). Use parchment paper to line baking sheets.
Prepare the cookie dough:
- Combine the powdered sugar, granulated sugar, and softened butter in a large bowl and mix until light and fluffy.
- Add the eggs, lemon zest, and lemon juice and beat until thoroughly blended.
- Mix the flour, baking powder, and salt in a another basin.
- Add the dry ingredients to the wet mixture little by little, stirring just until mixed.
Form the cookies:
- Roll the dough into balls using a spoon to scoop tablespoon-sized portions.
- Arrange them with a gap of approximately 2 inches on the baking sheets that have been prepared.
Bake:
- Bake for 12 to 15 minutes, or until the edges are just beginning to turn brown, in a preheated oven. As they cool, the centers will solidify, even though they may still appear somewhat squishy.
Prepare the Glaze:
- In a separate bowl, whisk together the powdered sugar, lemon juice, and lemon zest until smooth while the cookies cool.
Put the cookies in a glaze:
- Drizzle the lemon glaze over the cookies when they have fully cooled, or dip the tops into the glaze for a stronger taste.
Serve:
- Before serving, let the glaze set. Savor your mouthwatering lemon blossoms!
