Introduction
Corn fritters are a crispy, golden snack made from sweet corn kernels, flour, and simple seasonings. Ingredients

1 small green chili, chopped (optional, for spice)
2 tbsp fresh coriander (cilantro), chopped
½ tsp salt (adjust to taste)
¼ tsp black pepper or red chili flakes

Instructions
Prepare Batter
In a mixing bowl, whisk together flour, baking powder, salt, and pepper.
Add the egg and milk, whisk until smooth.
Fold in the corn kernels, onion, chili, and coriander. Mix until well combined.
Fry the Fritters
Heat about ½ inch of oil in a frying pan over medium heat.
Drop spoonful of batter (2–3 tbsp each) into the hot oil.
Flatten slightly with the back of the spoon for even cooking.
Fry for 2–3 minutes per side, until golden brown and crispy.
Remove and place on a paper towel to drain excess oil.
Serve
Serve hot with tomato ketchup, sour cream, yogurt dip, or chutney.
Tips
For extra crispiness, add 1 tbsp of cornmeal to the batter.
Do not overcrowd the pan; fry in small batches.
If batter feels too runny, add a spoon of flour to thicken.
You can make them healthier by pan-frying with less oil or air-frying at 190°C (375°F) for 12–15 minutes.
