1 cup corn kernels (fresh, canned, or frozen; if frozen, thaw first)

1 tsp baking powder

1 large egg

¼ cup milk (or buttermilk for extra flavor)

2 tbsp chopped onion (optional, for savory flavor)

1 small green chili, chopped (optional, for spice)

2 tbsp fresh coriander (cilantro), chopped

½ tsp salt (adjust to taste)

¼ tsp black pepper or red chili flakes

¼ tsp garlic powder (optional)

Oil for frying (vegetable, canola, or sunflower oil)

Instructions

Prepare Batter

In a mixing bowl, whisk together flour, baking powder, salt, and pepper.

Add the egg and milk, whisk until smooth.

Heat about ½ inch of oil in a frying pan over medium heat.

Drop spoonful of batter (2–3 tbsp each) into the hot oil.

Remove and place on a paper towel to drain excess oil.

Serve

Serve hot with tomato ketchup, sour cream, yogurt dip, or chutney.

Tips

For extra crispiness, add 1 tbsp of cornmeal to the batter.

Do not overcrowd the pan; fry in small batches.

If batter feels too runny, add a spoon of flour to thicken.

You can make them healthier by pan-frying with less oil or air-frying at 190°C (375°F) for 12–15 minutes.

Spicy Version: Add paprika or chili powder.

Sweet Corn Fritters: Skip onion, chili, and add 1 tbsp sugar; serve with honey or maple syrup.

Herby Twist: Add dill, parsley, or basil for extra flavor.
