Ingredients
½ cup (115g) unsalted butter, softened
½ cup (100g) sugar (white or brown)
1 egg
1 teaspoon vanilla extract
1 cup (150g) self-raising flour (or all-purpose flour + 1 teaspoon baking powder)
1 cup (40g) crushed cornflakes + extra for coating
½ teaspoon salt
½ cup (80g) raisins or chocolate chips (optional)
Instructions
Preheat & Prepare
Preheat the oven to 350°F (175°C) and line a baking tray with parchment paper.
Make the Dough
In a mixing bowl, cream together the butter and sugar until light and fluffy.
Add the egg and vanilla extract, mixing until well combined.
Sift in the flour and salt and mix until just combined.
Fold in the crushed cornflakes and raisins or chocolate chips (if using).
Shape the Biscuits
Roll tablespoons of dough into balls, then coat them in extra cornflakes for a crunchy texture.
Place them on the baking tray, leaving space between each biscuit.
Bake & Cool
Bake for 12–15 minutes or until golden brown.
Let them cool on the tray for 5 minutes, then transfer to a wire rack to cool completely.
