Cottage Cheese Banana Oat Protein Pancake Bites (Air Fryer)

Ingredients:

1 ripe banana

½ cup cottage cheese

2 large eggs

½ cup oats (quick or rolled)

½ tsp baking powder (optional, for fluffiness)

½ tsp vanilla extract (optional)

Pinch of cinnamon and salt (optional)

Instructions:

Blend the Batter:

In a blender or food processor, add the banana, cottage cheese, eggs, oats, baking powder, vanilla, cinnamon, and salt.

Blend until smooth and creamy.

Preheat Your Air Fryer:

Preheat to 350°F (175°C) for about 3 minutes.

Prepare the Mold:

Lightly grease silicone muffin cups or a silicone egg bite mold that fits your air fryer basket.

Fill the Molds:

Pour the batter evenly into the molds, filling each about ¾ full.

Air Fry:

Place the mold in the air fryer basket.

Cook at 350°F (175°C) for 8–10 minutes, or until golden on top and a toothpick comes out clean.

If needed, cook an extra 1–2 minutes for a firmer texture.

Cool Slightly & Serve:

Let cool for a couple of minutes before removing from molds.

Top with a drizzle of maple syrup, peanut butter, or a sprinkle of powdered sugar if desired!

Tips:

You can fold in mini chocolate chips or blueberries after blending for extra fun.

Store leftovers in the fridge up to 3 days or freeze for quick snacks!
