Cottage Cheese Cheesecake Bars (No-Bake, High-Protein)
A creamy and high-protein cheesecake bar made with cottage cheese, lightly sweetened, and set over a simple no-bake crust.
Ingredients
For the cheesecake layer
– 1 cup cottage cheese
– 1/4 cup cream cheese
– 2 tablespoons honey or maple syrup
– 1 teaspoon vanilla extract
For the crust
– 1/2 cup crushed graham crackers (or almond flour for low-carb)
– 2 tablespoons melted butter (or coconut oil)
Optional toppings
– Fresh berries
– A drizzle of honey
– A sprinkle of cinnamon
Instructions
In a bowl, mix crushed graham crackers with melted butter until combined.
Press the mixture firmly into a parchment-lined 8×8-inch baking dish. Refrigerate while making the filling.

In a blender or food processor, blend cottage cheese, cream cheese, honey, and vanilla extract until completely smooth.
