Cottage Cheese Pasta Sauce
Blended cottage cheese creates a smooth and rich texture in this protein-rich, creamy pasta sauce, making it ideal for a filling and healthful supper.
Ingredients
1 cup cottage cheese
½ cup milk or pasta water
¼ cup grated Parmesan cheese
1 tablespoon olive oil
2 cloves garlic, minced
1 teaspoon Italian seasoning
½ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon red pepper flakes (optional for heat)
Fresh basil or parsley for garnish
Instructions
Blend the Sauce
In a blender or food processor, blend cottage cheese, milk (or pasta water), and Parmesan cheese until smooth and creamy.
Sauté the Garlic
Heat olive oil in a pan over medium heat. Add minced garlic and cook for 1 minute until fragrant.
Combine and Simmer
Pour the blended cottage cheese mixture into the pan. Stir in Italian seasoning, salt, black pepper, and red pepper flakes if using.
Simmer on low heat for 2 to 3 minutes, stirring frequently, until warmed through.
Toss with Pasta
Add cooked pasta to the sauce, tossing to coat evenly. If needed, add more pasta water to thin the sauce to your desired consistency.
