Covered Peanut Butter Balls in Chocolate
Ingredients
For the Filling with Peanut Butter:
- One cup of peanut butter, either crunchy or creamy
- 1/4 cup softened unsalted butter
- One cup of powdered sugar
- One teaspoon of vanilla extract
- One-fourth teaspoon of salt
Regarding the Chocolate Coating:
- One and a half cups of dark or semi-sweet chocolate chips
- One tablespoon of coconut oil, if desired, to make chocolate smoother
Directions
Prepare the filling with peanut butter:
- Put the softened butter and creamy or crunchy peanut butter in a medium-sized mixing bowl. Blend till creamy and smooth.
- Add the salt, vanilla extract, and powdered sugar gradually. Mix until a dough forms and everything is well incorporated.
- To make handling the mixture simpler, place it in the refrigerator for approximately half an hour.
Form the Balls:
- After the peanut butter mixture has cooled, scoop out approximately 1 tablespoon and form it into a ball. Arrange the balls on a parchment paper-lined baking sheet. Continue until all of the mixture has been formed into balls.
- To solidify the balls, place the baking sheet in the freezer for 15 to 20 minutes.
Melt the chocolate.
- Put the semi-sweet chocolate chips and coconut oil (if using) in a bowl that is safe to use in the microwave.
- Stirring occasionally, microwave the chocolate for 30 seconds at a time until it is completely melted and smooth.
Coat the balls of peanut butter:
- Take the frozen peanut butter balls out of the refrigerator. Dip each ball into the melted chocolate with a toothpick or fork, letting any excess chocolate fall off.
- Place the coated balls back on the baking sheet covered with paper.
Relax and Set:
- After coating every ball, put the baking sheet in the fridge for approximately half an hour, or until the chocolate has solidified.
