Ingredients:
For the Filling:
1 cup crab meat (fresh, canned, or imitation, flaked)
½ cup shrimp, finely chopped (optional for extra seafood flavor)
1 cup cabbage, shredded
½ cup carrots, shredded
2 green onions, finely chopped
2 cloves garlic, minced
1 tbsp soy sauce
1 tbsp oyster sauce
1 tsp sesame oil
½ tsp sugar
½ tsp black pepper
1 tbsp cornstarch (to absorb moisture)
For Wrapping & Frying:
12 egg roll wrappers
1 egg, beaten (for sealing)
2 cups vegetable oil (for frying)
For Dipping Sauce (Optional):
¼ cup sweet chili sauce
2 tbsp soy sauce
1 tsp rice vinegar
Instructions:
Prepare the Filling
In a bowl, mix crab meat, shrimp (if using), cabbage, carrots, green onions, garlic, soy sauce, oyster sauce, sesame oil, sugar, black pepper, and cornstarch.
Stir well and let it sit for 5 minutes to absorb flavors.
Assemble the Egg Rolls
Lay an egg roll wrapper on a clean surface in a diamond shape (one corner facing you).
Place 2 tbsp of filling near the bottom corner of the wrapper.
Fold the bottom corner over the filling, then fold in the sides, and roll up tightly.
Brush the top edge with beaten egg to seal.
Repeat for all wrappers.
Fry the Egg Rolls
Heat vegetable oil in a deep pan to 350°F (175°C).
Fry 3-4 egg rolls at a time for 3-4 minutes, turning until golden brown.
Drain on a paper towel.
