Crab Quesadillas

Ingredients:( Servings: 4 )

8 small flour tortillas

1 cup cooked crab meat (or imitation crab)

1 cup shredded cheese (like Monterey Jack or cheddar)

1/2 cup diced bell pepper (any color)

1/4 cup finely chopped onion

1 jalapeño, finely chopped (optional for spice)

2 tablespoons fresh cilantro, chopped

1 tablespoon lime juice

1 tablespoon olive oil

Sour cream and salsa for serving

Salt and pepper to taste

Instructions:

 In a medium bowl, combine the crab meat, cheese, bell pepper, onion, jalapeño, cilantro, lime juice, and a pinch of salt and pepper. Mix well.

Heat a large skillet over medium heat and add a little olive oil.

Place one tortilla in the skillet. Spread a generous amount of the crab mixture on one half of the tortilla.

Fold the tortilla over to cover the filling. Cook for about 3 minutes or until golden brown, then flip and cook for another 2-3 minutes on the other side.

Repeat this process with the remaining tortillas and filling.

Once all quesadillas are cooked, cut them into wedges and serve warm with sour cream and salsa on the side.

Notes:
Feel free to add other veggies, like spinach or corn, to the filling for extra flavor.
If you love spice, try adding some hot sauce to the filling!
