This Cajun-inspired fried rice is packed with bold flavors from spicy Andouille sausage, tender shrimp, and juicy crawfish tails. Combined with aromatic vegetables and a smoky Creole seasoning, this dish is a one-pan wonder perfect for weeknight dinners or gatherings.

Ingredients

Proteins & Rice:

½ lb crawfish tails (peeled and cooked)

½ lb shrimp (peeled, deveined, and chopped)

1 Andouille sausage, sliced

3 cups cooked rice (preferably day-old)

2 tablespoons vegetable oil

Vegetables & Aromatics:

½ cup onion, finely chopped

½ cup bell pepper (red or green), diced

½ cup celery, diced

2 green onions, chopped

2 cloves garlic, minced

1 teaspoon fresh thyme (or ½ teaspoon dried)

1 teaspoon smoked paprika

Seasonings & Sauce:

1 tablespoon soy sauce

1 tablespoon Worcestershire sauce

1 teaspoon Creole or Cajun seasoning

½ teaspoon black pepper

½ teaspoon crushed red pepper flakes (optional)

1 teaspoon hot sauce (optional)

For Serving:

Chopped fresh parsley

Lemon wedges

Instructions

 Cook the Andouille Sausage

Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.

Add the sliced Andouille sausage and cook until browned, about 3-4 minutes. Remove and set aside.

Cook the Shrimp & Crawfish

In the same pan, add ½ tablespoon more oil, then add the shrimp and cook until pink, about 2 minutes.

Add the crawfish tails and cook for another 1-2 minutes, then remove and set aside with the sausage.

 Sauté the Vegetables

Add the remaining ½ tablespoon of oil, then stir in the onions, bell pepper, and celery.

Sauté until softened, about 3 minutes, then add the garlic, thyme, and smoked paprika and cook for another 30 seconds.

 Combine Everything

Push the vegetables to the side of the pan and add the rice. Stir-fry for about 2 minutes, allowing it to get slightly crispy.

Add the soy sauce, Worcestershire sauce, Creole seasoning, black pepper, and red pepper flakes (if using), stirring to coat the rice.

Finish & Serve

Return the sausage, shrimp, and crawfish to the pan, tossing everything together. Cook for another 2 minutes.

Stir in the green onions and hot sauce (if using).

Remove from heat and garnish with chopped parsley. Serve with lemon wedges on the side.

Use Day-Old Rice – This prevents the rice from getting mushy when stir-frying.

Pre-Cook Proteins Separately – This keeps everything tender and prevents overcooking.
