Ingredients:
- 1 package (10 ounces) frozen chopped spinach, thawed and drained
- 1 cup cream cheese, softened
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped onion
- 2 cloves garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1 sheet puff pastry, thawed but still cold
- 1 egg, beaten (for egg wash)
- Sesame seeds or poppy seeds for garnish (optional)
Instructions:
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a mixing bowl, combine the drained spinach, cream cheese, Parmesan cheese, chopped onion, minced garlic, salt, black pepper, and red pepper flakes (if using). Mix until well combined.
- On a lightly floured surface, unfold the puff pastry sheet. Roll it out slightly to smooth any creases and make it a little thinner.
- Cut the puff pastry into squares or rectangles, depending on your preference for the size of your puffs.
- Place a spoonful of the spinach and cheese mixture onto the center of each pastry square.
- Fold the corners of each pastry square over the filling, forming a pocket or triangle shape. Press the edges firmly to seal.
- Place the filled puff pastries onto the prepared baking sheet.
- Brush the tops of the puff pastries with the beaten egg, which will give them a nice golden color when baked. Optionally, sprinkle sesame seeds or poppy seeds on top for extra flavor and texture.
- Bake in the preheated oven for about 15-20 minutes, or until the puff pastry is golden brown and puffed up.
- Remove from the oven and let cool slightly before serving.
