cream cheese spinach puffs

Ingredients:

  • 1 package (10 ounces) frozen chopped spinach, thawed and drained
  • 1 cup cream cheese, softened
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 sheet puff pastry, thawed but still cold
  • 1 egg, beaten (for egg wash)
  • Sesame seeds or poppy seeds for garnish (optional)

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the drained spinach, cream cheese, Parmesan cheese, chopped onion, minced garlic, salt, black pepper, and red pepper flakes (if using). Mix until well combined.
  3. On a lightly floured surface, unfold the puff pastry sheet. Roll it out slightly to smooth any creases and make it a little thinner.
  4. Cut the puff pastry into squares or rectangles, depending on your preference for the size of your puffs.
  5. Place a spoonful of the spinach and cheese mixture onto the center of each pastry square.
  6. Fold the corners of each pastry square over the filling, forming a pocket or triangle shape. Press the edges firmly to seal.
  7. Place the filled puff pastries onto the prepared baking sheet.
  8. Brush the tops of the puff pastries with the beaten egg, which will give them a nice golden color when baked. Optionally, sprinkle sesame seeds or poppy seeds on top for extra flavor and texture.
  9. Bake in the preheated oven for about 15-20 minutes, or until the puff pastry is golden brown and puffed up.
  10. Remove from the oven and let cool slightly before serving.
