Creamy Alfredo Lasagna Soup 🍝🍜

- Half a pound of ground sausage.
- 1 little onion, diced
- 8 ounces of sliced mushrooms.
- 2 pieces of garlic, finely chopped
- 4 cups of young spinach leaves
- 5 cups of chicken broth with low sodium
- 5 pieces of lasagna noodles, broken
- 1 teaspoon of dried oregano
- Half a teaspoon of dried basil.
- 3 tablespoons of butter
- 3 tablespoons of flour
- 1 unit of milk
- 1 cup of grated Parmesan cheese
DIRECTIONS:
- Prepare the sausage.
In a large saucepan, cook the sausage over medium heat. - Add some veggies.
Cook the sliced mushrooms and chopped onion in the pan until they are tender. - Add spinach and garlic.
Cook the baby spinach for a few minutes until it shrinks, then add the chopped garlic. - Slowly cook.
After adding the chicken broth, cook it for five minutes, or until it begins to bubble softly. - Add the spices and pasta.
Sprinkle the dried oregano and dry basil over the broken lasagna noodles. Simmer the noodles for 10 to 12 minutes, or until they are tender. - Get the Alfredo sauce ready:
Melt butter in a separate pan over medium heat. Add the flour and cook for one to two minutes, or until just beginning to turn golden. - Add the milk gradually and heat until the mixture thickens.
- Add the Parmesan cheese and whisk until well combined and smooth.
- Stir the soup with the Alfredo sauce. Warm it up and enjoy!
