Creamy Mediterranean Chicken Skillet

Ingredients:
  1. 4 boneless, skinless chicken thighs

  3. 1 red bell pepper, sliced
  4. 1 green bell pepper, sliced
  5. 1/2 cup cherry tomatoes, halved
  6. 1/3 cup green olives
  7. 2 cloves garlic, minced
  8. 1 cup heavy cream
  9. 1/3 cup chicken broth
  10. 1 tsp Italian seasoning
  11. Salt and pepper, to taste
  12. Fresh parsley, chopped (for garnish)

Directions 

Step 1: Prepare the Chicken
Season chicken thighs with salt, pepper, and Italian seasoning.
Step 2: Sear the Chicken
Heat olive oil in a large skillet over medium-high heat. Add chicken thighs and sear for 4–5 minutes per side until golden. Remove chicken and set aside.
Step 3: Cook Vegetables
In the same skillet, sauté bell peppers and garlic for 3 minutes until softened. Add cherry tomatoes and olives, cooking for another 2 minutes.
Step 4: Make the Creamy Sauce
Pour in chicken broth and heavy cream. Stir to combine and simmer for 2–3 minutes.
Step 5: Combine and Simmer
Return chicken to the skillet. Spoon sauce over the chicken and simmer for 10 minutes until the chicken is cooked through (165°F internal temperature).
Step 6: Garnish and Serve
Sprinkle with fresh parsley and serve warm with rice, pasta, or crusty bread.
