Creamy Mushroom Chicken Recipe

Components:

  1. Four skinless, boneless chicken thighs or breasts
  2. One tablespoon of olive oil
  3. One tablespoon of butter
  4. One medium onion, cut finely
  5. Three minced garlic cloves
  6. Eight ounces (about two cups) of sliced button or cremini mushrooms
  7. Half a cup of dry white wine (optional; chicken broth can be used instead)
  8. One cup of chicken broth
  9. One cup of heavy cream (or, for a milder version, half-and-half)
  10. Half a teaspoon of dried thyme (or minced fresh thyme)
  11. Optional: 1/2 tsp dried rosemary
  12. To taste, add salt and pepper.
  13. Chopped fresh parsley (for garnish)

Directions:

Get the chicken ready:

  • Sprinkle salt and pepper on both sides of the chicken breasts.
  • In a large skillet, heat the olive oil over medium-high heat. The chicken breasts should be cooked through and golden brown after 6–7 minutes on each side in heated oil (the internal temperature should reach 165°F). After taking the chicken out of the skillet, place it aside.

Prepare the mushrooms:

  • Melt the butter in the same skillet over medium heat. Add the chopped garlic and onions, and cook for 3–4 minutes, or until the onions are transparent.
  • Cook the sliced mushrooms for 5 to 7 minutes, or until they begin to brown and release their moisture.

Prepare the Creamy Sauce:

  • If using, add the white wine to the pan and heat for about 2 minutes, allowing it to gradually decrease.
  • Bring the chicken broth to a simmer after stirring it in. For a slight reduction, let it cook for 3–4 minutes.
  • Stir in the heavy cream, rosemary (if using), and thyme. Bring to a simmer after giving it a good stir. The sauce should thicken to the consistency you wish after 5 to 7 minutes of cooking.

Mix the sauce and chicken together:

  • Spoon some of the sauce over the cooked chicken breasts and return them to the skillet. For the chicken to reheat and absorb the flavors, let it simmer in the sauce for three to five minutes.
  • If necessary, adjust the seasoning with salt and pepper after tasting the sauce.

Serve:

  • Add some freshly cut parsley as a garnish.
  • For a hearty dinner, serve the creamy mushroom chicken over pasta, rice, or mashed potatoes.
