Creamy Sausage Tortellini Soup with Sweet Potatoes and Spinach in One Pot
Ingredients
- One tablespoon of olive oil
- One pound of casing-free Italian sausage
- One medium onion, chopped
- Two minced garlic cloves
- Peel and dice 2 medium sweet potatoes.
- Four cups of chicken stock
- One fourteen-ounce can of chopped tomatoes (with liquids)
- One teaspoon of Italian seasoning
- To taste, add salt and pepper.
- 9 ounces of fresh or frozen cheese tortellini
- Four cups of fresh spinach
- One cup of half-and-half or heavy cream
- Parmesan cheese, grated (for serving)
Directions
- To cook the sausage, heat the olive oil in a big saucepan over a medium heat. Cook till browned after adding the sausage and breaking it up with a spoon.
- Add the vegetables: Cook the garlic and onion together until the onion becomes transparent. After that, heat for a further two to three minutes after adding the sweet potatoes.
- Pour in the diced tomatoes and chicken broth to add liquids and seasonings. Add the salt, pepper, and Italian seasoning and stir. Bring to a simmer and boil for 10 to 15 minutes, or until sweet potatoes are cooked.
- Tortellini should be added and cooked as directed on the package, which is typically three to five minutes.
- Complete the soup by adding the spinach and heavy cream after the tortellini has finished cooking. Cook until everything is thoroughly cooked and the spinach has wilted.
- Ladle the soup into bowls and sprinkle grated Parmesan cheese on top to serve.
