For the Pasta:

8 oz (225g) penne, fettuccine, or pasta of choice

Salted water for boiling

For the Cream Sauce:

2 tbsp butter

4 cloves garlic, minced

1 cup heavy cream

½ cup chicken broth

¾ cup grated Parmesan cheese

½ tsp red pepper flakes (optional)

½ cup chopped sun-dried tomatoes (in oil, drained)

2 cups fresh baby spinach

Cook the Pasta:

Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Drain and set aside.

Prepare and Cook the Chicken:

Slice chicken breasts in half lengthwise to make cutlets (if using thick breasts).

Season both sides with salt, pepper, garlic powder, and Italian seasoning.

Heat olive oil in a large skillet over medium heat. Sear chicken for 4–5 minutes per side or until golden and cooked through.

Remove chicken, let it rest for a few minutes, then slice into strips.
