1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
4 large eggs, beaten
1 cup milk
1/2 cup Greek yogurt
1/4 cup chopped onion
200gram broccoli
1/4 cup chopped bell pepper (any color)
2 cloves garlic, minced
1/4 teaspoon salt
1/8 teaspoon black pepper
Pinch of nutmeg (optional)
Preheat oven: Preheat oven to 350°F (175°C). Grease a 9-inch pie plate or baking dish.
Sauté Vegetables: In a large skillet, sauté onion, bell pepper, and garlic in a little butter or olive oil until softened.
Combine Ingredients: In a large bowl, combine spinach, cheddar cheese, Parmesan cheese, beaten eggs, milk, Greek yogurt , broccoli,sautéed vegetables, salt, pepper, and nutmeg (if using). Mix well.
Bake: Pour the mixture into the prepared baking dish. Bake for 40-45 minutes, or until the quiche is set and the top is golden brown.
Cool and Serve: Let the quiche cool for a few minutes before slicing and serving.
