Cook Time: 10 minutes
Total Time: 20 minutes
Servings: 4
Ingredients:
1 cup cottage cheese (drained if watery)
1 egg
1/2 cup almond flour (or coconut flour for extra crispiness)
1/4 cup grated Parmesan cheese
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp baking powder (for fluffiness)
2 tbsp fresh herbs (chives or parsley, optional)
2 tbsp olive oil (for frying)
Instructions:
Prepare the batter:
In a mixing bowl, combine cottage cheese, egg, almond flour, Parmesan, garlic powder, onion powder, salt, pepper, and baking powder.
Stir well until a thick, slightly sticky dough forms.
If the mixture is too wet, add an extra tablespoon of almond flour.
Shape the treats:
Scoop about 1 tablespoon of the mixture and form small patties or balls.
Flatten slightly for even cooking.
Fry to crispy perfection:
Heat olive oil in a non-stick pan over medium heat.
Place the cottage cheese patties in the pan, leaving space between them.
Cook for 3-4 minutes per side, flipping gently, until golden brown and crispy.
Serve & enjoy:
Remove from the pan and place on a paper towel to drain excess oil.
Garnish with fresh herbs and serve warm with sour cream, Greek yogurt, or a sugar-free dipping sauce.
Tips & Tricks:
Drain excess liquid from the cottage cheese for better texture.
Use coconut flour for a firmer, extra-crispy texture.
Add shredded cheese (cheddar or mozzarella) for extra flavor.
Bake instead of frying at 375°F (190°C) for 15-18 minutes, flipping halfway.
Make it spicy by adding a pinch of paprika or chili flakes.
