1 tbsp lemon juice

8 egg roll wrappers
1 tbsp water (for sealing)

½ cup mayonnaise
2 tbsp lemon juice
1 tsp Dijon mustard
½ tsp garlic powder
½ tsp Old Bay seasoning
½ tsp honey (optional)
Instructions
Make the Crab Cake Filling
In a large bowl, combine crab meat, panko breadcrumbs, egg, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, garlic powder, onion powder, parsley, lemon juice, salt, and pepper.
Mix gently to avoid breaking the crab meat too much. The mixture should hold together when pressed. If too dry, add a bit more mayo; if too wet, add more breadcrumbs.
Assemble the Egg Rolls
Lay an egg roll wrapper on a flat surface with a corner pointing toward you (diamond shape).
Place about 2 tablespoons of the crab mixture in the center.
Fold the bottom corner over the filling, then fold in the sides.
Roll tightly toward the top corner, sealing the edge with a bit of water.
Repeat for all egg rolls.
Air Fry the Egg Rolls
