Crispy French Fries with Cheese Sauce
Ingredients:
For Crispy French Fries:
- 700 grams potatoes
- 1 teaspoon salt
- 25 grams cornstarch
- 2 eggs
- 100 grams breadcrumbs
For Cheese Sauce:
- 20 grams unsalted butter
- 1 teaspoon wheat flour
- 1/4 teaspoon chili powder
- 125 ml milk
- 75 grams cheddar cheese
- 1 teaspoon hot sauce (optional)

Crispy French Fries:
Preparation:
- Peel the potatoes and cut them into sticks resembling French fries. Rinse them in cold water and pat dry thoroughly
- Preheat the oven to 220°C (430°F) and line a baking sheet with parchment paper.
Coating and Baking:
- In a bowl, mix the potato sticks with salt and cornstarch until evenly coated.
- In another bowl, whisk the eggs.
- Dip each potato stick into the whisked eggs, then coat it with breadcrumbs, ensuring an even covering.
- Place the coated potato sticks on the prepared baking sheet.
- Bake in the preheated oven for 25-30 minutes or until the fries are golden and crispy, flipping them halfway through for even cooking.
Cheese Sauce:
Prepare the Sauce:
- In a saucepan, melt the unsalted butter over medium heat.
- Add wheat flour and chili powder, stirring continuously for about a minute to create a roux.
- Gradually pour in the milk while whisking constantly to avoid lumps.
- Cook until the mixture thickens, stirring frequently.
Cheese Addition:
- Reduce the heat to low and add the cheddar cheese to the sauce. Stir until the cheese melts and the sauce becomes smooth.
- Add hot sauce (if using) for an extra kick. Adjust seasoning according to taste.
Serve:
- Plate the crispy French fries and drizzle or serve the cheese sauce on the side for dipping.
