Crispy Fried Zucchini in the Air Fryer
Introduction
Fried zucchini gets a healthy makeover in this air fryer recipe! Lightly breaded with seasoned panko and Parmesan, each slice turns out crispy on the outside and tender on the inside—with no oil splatter mess. Serve with marinara or ranch for a crowd-pleasing appetizer or veggie side.

Ingredients
For 2–3 servings:
2 medium zucchinis, sliced into 1/4-inch rounds
1/2 cup all-purpose flour
2 large eggs
1 tbsp milk (optional, for egg wash)
3/4 cup panko breadcrumbs
1/4 cup grated Parmesan cheese
1/2 tsp garlic powder
1/2 tsp Italian seasoning
Salt and black pepper to taste
Olive oil spray
Instructions
Prep the Breading Station (5 minutes)
Bowl 1: Add flour.
Bowl 2: Whisk eggs and optional milk.
Bowl 3: Mix panko, Parmesan, garlic powder, Italian seasoning, salt, and pepper.
Coat the Zucchini (5–7 minutes)
Pat zucchini slices dry.
Dredge each slice in flour, then dip into the egg, then press into the breadcrumb mixture to coat well.
Set aside on a plate.
Air Fry in Batches (8–10 minutes per batch)
Preheat your air fryer to 400°F (200°C) for 3 minutes.
Arrange coated zucchini slices in a single layer in the air fryer basket. Avoid overlapping.
Lightly spray tops with olive oil.
Air fry at 400°F for 8–10 minutes, flipping halfway through, until golden and crispy.
Repeat with remaining zucchini slices.
