Crispy Garlic Parmesan Chicken with Golden Potatoes
Ingredients:
1.5 lbs (700 g) chicken thighs or breasts, boneless and skinless
1 lb (450 g) baby potatoes, halved
4 tablespoons olive oil, divided
4 cloves garlic, minced
1/2 cup grated Parmesan cheese
1 teaspoon dried thyme
1 teaspoon dried rosemary
1/2 teaspoon paprika
1/4 teaspoon red pepper flakes (optional)
Salt and black pepper, to taste
2 tablespoons fresh parsley, chopped, for garnish
How to proceed:
Two tablespoons of olive oil should be added to a large skillet that has been preheated over medium heat. In addition to salt, pepper, and paprika, season the chicken with a pinch of red pepper flakes (if you are using them).
Chicken should be seared on both sides until it is golden brown and cooked through, which should take around four to five minutes per side. Take the food out of the skillet and set it aside.
While the garlic is still in the same skillet, add the remaining olive oil and sauté it for thirty seconds, or until it becomes fragrant.
A touch of salt and pepper, along with thyme and rosemary, should be added to the skillet along with the potatoes that have been cut in half. The potatoes should be cooked for eight to ten minutes, tossing them occasionally, until they are golden brown and soft.
The chicken should be returned to the skillet, and then the cheese should be sprinkled with Parmesan before the lid is shut. Continue cooking the meal for another two to three minutes, which will allow the cheese to melt and the flavors to come together.
Garnish with chopped fresh parsley, and serve as soon as possible.
