Ingredients
1 lb (450 g) fresh asparagus, trimmed
½ cup all-purpose flour
2 large eggs, beaten
1 cup breadcrumbs (panko for extra crunch)
½ cup grated Parmesan cheese
1 tsp garlic powder
½ tsp paprika (optional, for color and flavor)
Salt & black pepper, to taste
Cooking spray or olive oil mist
Optional Dipping Sauces: ranch, marinara, garlic aioli, or spicy sriracha mayo.
Instructions
Prep the Asparagus (5 minutes)
Wash and trim the woody ends of the asparagus.
Pat dry with a towel (helps coating stick).
Coat the Asparagus (5 minutes)
Set up three bowls:
Bowl 1: flour (seasoned with a little salt & pepper)
Bowl 2: beaten eggs
Bowl 3: breadcrumbs, Parmesan, garlic powder, and paprika mixed together
Dredge each asparagus spear in flour, dip in egg, then roll in breadcrumb mixture until well coated.
Bake or Air Fry (15 minutes)
Oven Method:
Preheat oven to 425°F (220°C).
Arrange coated asparagus on a parchment-lined baking sheet.
Lightly spray with cooking spray or drizzle with olive oil.
Bake for 12–15 minutes until golden brown and crispy.
Air Fryer Method:
Preheat air fryer to 400°F (200°C).
Place asparagus in a single layer (work in batches if needed).
Air fry 8–10 minutes, flipping halfway, until crisp.
Serve
Serve hot with dipping sauce of choice.
Garnish with extra Parmesan and fresh parsley if desired.
Tips
Choose medium-thickness asparagus — too thin can burn, too thick takes longer to cook.
Add a pinch of cayenne pepper for a spicy kick.
To make it gluten-free, use almond flour and gluten-free breadcrumbs.
These are best served fresh, but leftovers can be reheated in the oven or air fryer for crispiness.
