Instructions
Prep the Potato Mixture (10 min)
Grate potatoes and onion using the coarse side of a box grater.
Place in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible.
In a large bowl, combine drained potato mixture with egg, flour, salt, pepper, and garlic powder (if using). Mix until combined.

Preheat your air fryer to 375°F (190°C) for 3 minutes.
Shape the Pancakes
Scoop about 2 tablespoons of the mixture and flatten into a pancake (~½ inch thick).
Lightly brush both sides with oil or use a spray for extra crispiness.
Air Fry in Batches (12–15 min)
Place 3–4 pancakes in the air fryer basket in a single layer (do not overcrowd).
Air fry at 375°F (190°C) for 6–7 minutes, flip, then cook another 6–7 minutes until golden brown and crispy on both sides.
Repeat with remaining mixture.
Tips & Tricks
Extra crispy: Let the mixture sit for 2–3 minutes after grating so more moisture can be drained.
No sticking: Use parchment paper with holes or lightly grease the basket.
Flour adjustment: Start with 2 tbsp flour. Add a third if the mix feels too wet.
Texture tip: Use a food processor for quicker grating if making large batches.
Serving Suggestions
Traditional: Serve with sour cream or applesauce.
Savory: Top with smoked salmon, sautéed mushrooms, or herbed yogurt.
Add a sprinkle of fresh parsley, dill, or chives for a Polish finish.
