2 medium zucchini, sliced into ¼-inch rounds
2 tbsp extra virgin olive oil
½ tsp salt
¼ tsp black pepper

For the Garlic Herb & Walnut Dressing:
⅓ cup walnuts, finely chopped (or pine nuts)
2 tbsp extra virgin olive oil
2 cloves garlic, minced
1 tbsp fresh parsley, chopped
1 tbsp fresh basil, chopped
½ tsp dried oregano
½ tsp red pepper flakes (optional, for heat)
1 tbsp lemon juice
½ tsp lemon zest
¼ tsp salt
For Garnish (Optional):
2 tbsp crumbled feta or grated Parmesan
1 tbsp toasted sesame seeds
Instructions
Prep the Zucchini
Slice the zucchini into ¼-inch thick rounds and pat them dry with a paper towel to remove excess moisture.
Toss with olive oil, salt, black pepper, and smoked paprika in a bowl.
Sauté the Zucchini
Heat a large skillet over medium-high heat and add 1 tbsp olive oil.
Arrange zucchini slices in a single layer (do not overcrowd the pan).
Cook for 3-4 minutes per side, until golden and crispy. Remove from heat.
Make the Dressing
In a small pan, heat 2 tbsp olive oil over low heat.
Add walnuts and minced garlic, sauté for 1-2 minutes until fragrant.
Stir in parsley, basil, oregano, red pepper flakes, lemon juice, zest, and salt. Mix well and remove from heat.
Assemble & Serve
Drizzle the warm garlic herb & walnut dressing over the crispy zucchini.
Garnish with feta, Parmesan, or sesame seeds if desired.
