Ingredients (Serves 6)
2–3 lbs chicken thighs or drumsticks
1 bottle (18 oz) barbecue sauce
½ cup (1 stick) unsalted butter
1 teaspoon garlic powder
1 teaspoon black pepper
Optional: pinch of salt
Instructions
Start by preparing your crockpot. Lightly grease it with cooking spray if desired to prevent sticking and make cleanup easier.
Place the chicken thighs or drumsticks into the crockpot in a single layer. Keeping the chicken spread out helps it cook evenly and absorb more of the sauce.
Sprinkle the garlic powder and black pepper evenly over the chicken pieces. If your barbecue sauce is low in salt, you can also add a small pinch of salt at this stage.
Next, pour the entire bottle of barbecue sauce over the chicken. Make sure all pieces are coated so the flavor distributes evenly as it cooks.
Place the stick of butter directly on top of the chicken and sauce. As the crockpot heats, the butter will slowly melt and combine with the barbecue sauce, creating a rich, velvety coating.
