The beauty of this recipe is that the slow cooker does all the work—you just mix, dump, and let it cook to golden perfection. No oven needed, which also frees up space if you’re making a big meal.

Ingredients
1 (32 oz) bag frozen diced hash browns (shredded or cubed, thawed slightly)
1 (10.5 oz) can cream of chicken soup (or cream of mushroom for vegetarian)
1 cup sour cream
2 cups shredded sharp cheddar cheese (divided)
½ cup butter (melted)
½ cup chopped onion (optional)
½ tsp garlic powder
½ tsp onion powder
½ tsp paprika (optional, for flavor & color)
Salt & black pepper, to taste
½ cup crushed cornflakes or Ritz crackers (optional topping)
2 tbsp melted butter (for topping, optional)
Step-by-Step Instructions with Timing
Prep Time: 10 minutes
Spray your crockpot with nonstick cooking spray (or use a liner for easy cleanup).
In a large mixing bowl, combine:
Cream of chicken soup
Sour cream
Melted butter
Chopped onion (if using)
Garlic powder, onion powder, paprika, salt, and pepper
Stir until smooth.
Add in 1 ½ cups cheddar cheese (reserve ½ cup for topping) and mix well.
Fold in thawed hash browns until fully coated in the cheesy mixture.
Cooking Time: 4–6 hours (Low) or 2–3 hours (High)
Transfer the potato mixture into the crockpot and spread evenly.
Cover with lid and cook:
Low setting: 4–6 hours
High setting: 2–3 hours
(Potatoes should be tender, hot, and cheese fully melted.)
Before Serving
About 10 minutes before serving, sprinkle the remaining ½ cup cheddar cheese on top. Cover again until cheese is melted.
