This rich and comforting crockpot meatloaf takes classic flavors to the next level with sweet caramelized onions and gooey melted Swiss cheese. Slow-cooked to perfection, it turns out incredibly tender, juicy, and packed with deep savory flavor—perfect for a hearty family meal.
Ingredients
2 pounds ground beef
1 cup breadcrumbs
½ cup grated Parmesan cheese
¼ cup milk
2 eggs
1 tablespoon Worcestershire sauce
1 teaspoon salt
½ teaspoon black pepper
2 large onions, thinly sliced
2 tablespoons butter
1 cup beef broth
8 slices Swiss cheese
Instructions
Start by preparing the meatloaf mixture. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, milk, eggs, Worcestershire sauce, salt, and black pepper. Mix everything together until well combined, but avoid overmixing to keep the meatloaf tender.
Shape the mixture into a loaf and carefully place it into your crockpot.
Next, prepare the caramelized onions. In a skillet over medium heat, melt the butter. Add the sliced onions and cook slowly, stirring occasionally, until they become soft, golden brown, and caramelized—this takes about 20–25 minutes. The slow cooking brings out their natural sweetness and enhances the overall flavor.
Once the onions are caramelized, pour in the beef broth and let it simmer for a few minutes until slightly reduced. This creates a rich, flavorful mixture. Pour the onions and broth over the meatloaf in the crockpot.
Cover and cook on low for 6–8 hours, or until the meatloaf is fully cooked and tender.
About 10 minutes before serving, place the slices of Swiss cheese over the top of the meatloaf. Cover again and allow the cheese to melt into a creamy, gooey layer.
Carefully remove the meatloaf, slice, and serve hot with the caramelized onions spooned over the top.
Tips & Serving Ideas
Serve with mashed potatoes, rice, or crusty bread to soak up the flavorful juices. For extra richness, you can add a splash of cream to the onions while cooking.
Store leftovers in the refrigerator for up to 3 days. Reheat gently to maintain its juicy texture.
This slow cooker dish is the ultimate comfort food—easy to prepare and full of bold, delicious flavors! 😍
