Croissant Step By Step

Ingredients:

700g flour
10g salt
10g sugar
7g dry yeast
50ml oil
75g butter
2dl of cold milk
180g plain yogurt
1 tablespoon vinegar

METHOD

  1. Mix flour, salt, sugar and dry yeast.
  2. Bring the oil and butter to the boil in a pot, remove from the stove.
  3. Stir cold milk into the oil / butter mixture.
  4. Add yogurt and vinegar.
  5. Put the mixture in a bowl.
  6. Divide the flour mixture into 3 parts.
  7. Add the first part to the liquid and knead for 1 minute.
  8. Add the second part of flour and knead for 2 minutes.
  9. Add the rest of the flour and knead into a soft dough.
  10. Hit the dough several times on the surface, the dough likes that.
  11. Let the dough rest for 45 minutes in a floured bowl.
  12. The dough should now be very soft.
  13. Knead again a little.
  14. Flour the work surface a little.
  15. Roll out the dough into a large, round shape.
  16. Cut into 24 parts. Fill as desired, cheese, meat, chocolate, jam or leave empty.
  17. Roll up as shown in the picture, close the ends when filling, i.e. close the filling with the clasps and roll up, pulling the dough back a little and rolling it up or pulling and rolling up the tips over and over again.
  18. Drizzle the croissant with some liquid milk.
  19. Let rise for 30 minutes.
  20. Brush with egg Bake in the preheated oven at 200g or 392F for 18min.
