Ingredients:
- 2 tbsp tomato puree
- Generous couple of pinches oregano
- ½ tbsp olive oil
- 2 tbsp water
- ½ tbsp ketchup
- 4 crumpets
- ½ bell pepper, cut into thin strips
- 4 baby plum tomatoes, cut in quarters
- 100g mature cheddar cheese, grated
- 150g mozzarella cheese, sliced
- 4 button mushrooms, sliced
- (any other toppings you want!)
Directions:
- Pre-heat Air Fryer: Set your air fryer to 360°F (180°C) and allow it to preheat for about 3-5 minutes.
- Prepare Sauce: While the air fryer is preheating, mix together the tomato puree, ketchup, oregano, olive oil, and water in a small bowl.
- Toast Crumpets: Place the crumpets in the preheated air fryer basket and toast for 2-3 minutes until they are lightly crispy. Remove them from the air fryer.
- Assemble Crumpet Pizzas: Spread the prepared tomato sauce evenly over the toasted crumpets. Add the mushroom slices, bell pepper strips, baby plum tomatoes, and any other desired toppings.
- Add Cheese: Scatter grated cheddar cheese on top of the toppings and finish with a few slices of mozzarella on each crumpet.
- Cook in Air Fryer: Place the assembled crumpet pizzas back into the air fryer basket. Cook for 5-7 minutes at 360°F (180°C) until the cheese is melted and starts to brown.
- Garnish: Remove the crumpet pizzas from the air fryer and garnish with a few sprigs of basil.
