Cucumber Egg Yogurt Salad (Healthy Dinner Bowl)
Ingredients
2 cucumbers
1/3 tsp salt
3 eggs (boiled)
1–2 carrots (grated)
80 g cooked corn
2 tbsp green onion (chopped)
2 tbsp parsley (chopped)
3–4 tbsp thick yogurt (Greek-style is best)
1 tbsp mustard
Black pepper, to taste
Optional: lemon juice or chili flakes
Instructions
Prepare cucumbers:
Slice cucumbers thin, sprinkle with salt, mix, and let sit 10 minutes.
Gently squeeze out excess water (important for a creamy salad).
Boil eggs:
Boil eggs for 8–10 minutes, cool, peel, and chop.
Prep vegetables:
Grate carrots, chop green onion and parsley.
Mix everything:
In a large bowl, add cucumbers, eggs, carrots, corn, green onion, and parsley.
Make dressing:
In a small bowl mix yogurt + mustard + black pepper
(add a few drops of lemon juice if you like).
Combine & serve:
Toss salad with dressing until well coated.
Serve immediately or chill for 10 minutes.
