Prep Time: 10 minutes

Cook Time: 15–18 minutes

Cool Time: 15–20 minutes

Total Time: ~45 minutes

Yields: 6 mini tartlets

Ingredients:

For the Coconut Crust:

1 ½ cups unsweetened shredded coconut

2 tbsp melted butter or coconut oil

2 tbsp honey or maple syrup

1 egg white (for binding)

For the Custard Filling:

2 egg yolks

1 whole egg

1 cup coconut milk (or any milk of choice)

1/4 cup sugar or sweetener of choice

1 tsp vanilla extract

Pinch of salt

Instructions:

Make the Coconut Crust

In a bowl, mix shredded coconut, melted butter, honey (or maple syrup), and egg white until well combined.

Press the mixture into silicone muffin cups or mini tart pans. Press firmly on the bottom and sides to create a shell.

Air Fry the Crust

Preheat the air fryer to 325°F (160°C) for 3–5 minutes.

Place the coconut crusts in the basket. Air fry at 325°F for 5–6 minutes until the crust is lightly golden.

Remove and let cool for a few minutes while preparing the custard.

Prepare the Custard Filling

In a small bowl, whisk egg yolks, whole egg, sugar, vanilla, and a pinch of salt.

Slowly add the coconut milk while whisking to create a smooth mixture.

Assemble and Cook

Pour the custard into the cooled crusts. Fill almost to the top but not overflowing.

Carefully place the filled tartlets back into the air fryer basket.

TIP: Air fryers with a lid or oven-style are easiest for this step — use tongs or a tray to prevent spills.

Air fry at 300°F (150°C) for 10–12 minutes, or until the custard is just set and slightly jiggly in the center.

Cool and Serve

Remove from air fryer and cool in the molds for 15–20 minutes.

Chill in the fridge for an extra firm set (optional).

Serve as-is or top with fresh berries, toasted coconut, or a drizzle of honey.

Tips for Success:

Use silicone molds or ramekins that fit well in your air fryer basket.

Avoid overfilling the custard to prevent spills during cooking.

Check doneness by gently tapping the side — the custard should jiggle slightly but not be wet.

Optional Toppings:

Fresh berries

Toasted coconut flakes

Whipped cream

Lime zest or caramel drizzle
