Date Coffee Loaf Cake with Walnuts and Rich Espresso Glaze 

Ingredients:

For the Cake:

  1. – 1 1/2 cups all-purpose flour
  2. – 1/2 teaspoon baking powder
  3. – 1/2 teaspoon baking soda
  4. – 1/4 teaspoon salt
  5. – 1 teaspoon ground cinnamon
  6. – 1/2 cup unsalted butter, softened
  7. – 1/2 cup packed brown sugar
  8. – 2 large eggs
  9. – 1 teaspoon vanilla extract
  10. – 1/2 cup brewed coffee, cooled
  11. – 1 cup pitted dates, chopped
  12. – 1/2 cup walnuts, chopped

For the Espresso Glaze:

  1. – 1/4 cup brewed espresso, cooled
  2. – 1/2 cup powdered sugar
  3. – 1 tablespoon unsalted butter, melted
Directions:

How to proceed:
1. Preheat your oven to 175 degrees Celsius (350 degrees Fahrenheit). Prepare a loaf pan measuring 9 inches by 5 inches by greasing and flouring it.
2. In a basin of intermediate size, combine the flour, baking powder, baking soda, salt, and cinnamon by whisking them together.

3. In a large mixing basin, beat the butter that has been softened with the brown sugar until foamy and light, which should take about three minutes. One egg at a time, beating thoroughly after each addition, add the eggs to the mixture. Extract of vanilla should be stirred in.
4. Beginning and ending with the dry ingredients, gradually add the dry ingredients to the wet ingredients, alternating with the brewed coffee. This process should be repeated throughout the entire process. Continue to mix until everything is just mixed.
5. Add the chopped dates and walnuts using a gentle folding motion.
6. After the loaf pan has been prepped, pour the batter into it and smooth up the top. Baking time should be between 55 and 60 minutes, or until a toothpick put into the center of the cake comes out clean.
