DELICIOUS POTATOES
Ingredients
- Two to four medium sweet potatoes (about two pounds)
- Two teaspoons of olive oil
- One teaspoon of salt
- Half a teaspoon of black pepper
- One teaspoon of optional garlic powder
- One teaspoon of optional paprika
- One teaspoon of optional ground cinnamon (for a sweet twist)
- Garnish with fresh herbs, such as thyme or rosemary (optional).
Directions
Warm up the oven:
- Set the oven temperature to 425°F (220°C).
Get the sweet potatoes ready:
- Clean the sweet potatoes and peel them. For consistent cooking, cut them into 1-inch cubes.
Sweet potatoes should be seasoned:
- Combine the sweet potato cubes, olive oil, salt, pepper, and any extra seasonings (cinnamon, paprika, or garlic powder) in a big bowl.
On a baking sheet, spread:
- To make cleanup easier, prepare a baking sheet with parchment paper and spread the seasoned sweet potatoes in a single layer.
Roast:
- The sweet potatoes should be soft and caramelized after 25 to 30 minutes of roasting in a preheated oven. For uniform browning, toss them halfway through cooking.
Serve after garnishing:
- When finished, take the sweet potatoes out of the oven and let them to cool a little. Serve warm, garnished with fresh herbs if preferred.

Sweet potatoes mashed:
- Sweet potatoes that have been peeled and cubed should be boiled for 15 to 20 minutes to make them soft. Add butter, milk, salt, and a dash of cinnamon after draining and mashing.
Casserole with sweet potatoes:
- Add eggs, butter, vanilla, brown sugar, and a little milk to the mashed cooked sweet potatoes. Transfer to a baking dish, sprinkle with brown sugar and pecan crumbles, and bake for 25 to 30 minutes at 350°F (175°C).
Fries with sweet potatoes:
- Slice sweet potatoes thinly, toss with salt, paprika, and olive oil, and bake for 20 to 25 minutes at 425°F (220°C) until crispy.
Soup with Sweet Potatoes:
- Add diced sweet potatoes, vegetable broth, seasonings, and sautéed onions and garlic in a saucepan. Blend until smooth after cooking until soft.
