Ingredients:

4 boneless, skinless chicken breasts

1 cup pineapple chunks (fresh or canned, drained)

1/4 cup teriyaki sauce

2 tbsp soy sauce

2 tbsp honey or brown sugar

2 tbsp olive oil

1 tbsp garlic, minced

1 tbsp ginger, grated (optional)

1/2 tsp black pepper

1/2 tsp red pepper flakes (optional, for a little heat)

Fresh cilantro or green onions for garnish (optional)

Lime wedges for serving (optional)

Directions:

  1. Prepare the foil packets:

Preheat your grill or oven to 400°F (200°C).

Tear off four large pieces of aluminum foil (enough to wrap the chicken and veggies).

Marinate the chicken:

In a bowl, mix together the teriyaki sauce, soy sauce, honey (or brown sugar), olive oil, minced garlic, ginger (if using), black pepper, and red pepper flakes (if using).

Place the chicken breasts in the mixture and let it marinate for at least 15 minutes (or up to 30 minutes for more flavor).

Assemble the foil packets:

Place one marinated chicken breast in the center of each foil piece.
