1 head of green cabbage
500g carrots (1.1 lbs)
1 large onion
6 garlic cloves
1 can sliced tomatoes (800g, 28 oz)
1 can stewed tomatoes (800g, 28 oz)

1/2 tsp garlic powder

Method of Preparation
Step 1: Prepare the Vegetables
Cut the Cabbage
Wash the whole head of cabbage and cut it into cubes about 2.5 cm (1 inch) in size. The cabbage will shrink as it cooks, so the pieces should be large enough to scoop easily with a spoon.
Chop Carrots and Onion
Add pre-washed baby carrots to the pot, chopping them if desired. Chop the large onion.
Prepare Garlic and Celery
Crush the garlic cloves slightly to release their flavors, then slice them. Chop the celery, using as much of the stem as possible, except for the leaves.
Step 2: Combine Ingredients
Add Tomatoes
Add the can of diced tomatoes and the can of stewed tomatoes to the pot.
Add Water
Add just enough water to cover the vegetables. The volume of the cabbage will decrease as it cooks.
Add Spices
Add the spices: 1 tsp of black pepper, 1/2 tsp of onion powder, 1/2 tsp of garlic powder, 1 tsp of chili powder, 1 tsp of oregano, and 1 tsp of salt (if using). If you like spicy food, add some spicy sauce to taste.
Step 3: Cook the Soup
Bring to a Boil
Bring the soup to a boil on the stove.
Simmer the Soup
Once boiling, reduce the heat and let it simmer gently for about 15 minutes.
Cook for an Hour
Reduce the heat to medium and let the soup cook for another hour. During the last half hour of cooking, reduce the heat to medium-low and cover the soup.
