Double Strawberry Cake
A strawberry’s paradise! A wonderful dessert, this bright and fruity cake has two layers of strawberry flavor, is covered with creamy strawberry frosting, and is adorned with fresh berries.
Ingredients
Regarding the Cake:
Two and a half cups all-purpose flour
1/2 teaspoon of baking powder
One cup of softened unsalted butter and ½ teaspoon salt
Two cups of sugar granules
Four big eggs
One-half teaspoon vanilla extract
One cup of strawberry purée, which is created by mixing either frozen or fresh strawberries
Half a cup of milk
A few optional drops of pink food coloring
Regarding the Frosting:
One cup of softened unsalted butter
Four cups of powdered sugar
½ cup puréed strawberries
One teaspoon of vanilla cream
Two tablespoons of heavy cream (optional; used to change consistency)
As a garnish:
Fresh strawberries

Get the cake layers ready:
Set the oven temperature to 175°C (350°F). Line two 9-inch round cake pans with parchment paper and grease them.
Sift the flour, baking powder, and salt in a medium-sized bowl.
Cream the butter and sugar in a big bowl until they are light and creamy.
One by one, add the eggs, thoroughly mixing each time. Add the vanilla extract and stir.
Add the dry components to the wet mixture gradually, starting and finishing with the dry ingredients and switching between the milk and strawberry purée.
For a more colorful appearance, feel free to add a few drops of pink food coloring.
To bake the cake, equally distribute the batter among the prepared pans.
A toothpick inserted in the center should come out clean after 25 to 30 minutes of baking.
After 10 minutes of cooling in the pans, move the cakes to a wire rack to finish cooling.
Prepare the frosting by beating the melted butter until it becomes creamy and smooth.
Add the powdered sugar gradually while pounding on low speed.
Add the vanilla essence and strawberry purée and stir until incorporated.
If the frosting is too thick, add 1 tablespoon of heavy cream at a time.
Cake Assembly: Arrange a single cake layer on a cake stand or serving dish. Cover with a thick layer of icing.
Cover the frosting with the second layer of cake. Cover the cake’s sides and top with the leftover icing.
Decorate and Serve: For added flare, top the cake with fresh strawberries, whipped cream swirls, and optional strawberry glaze.
For optimal texture and flavor, let the cake cool for at least half an hour before slicing.
