Dreamsicle Salad in Orange
Ingredients
Regarding the salad:
- Three cups of fresh or canned mandarin oranges, drained if canned
- Two cups of tiny marshmallows
- One cup of unsweetened or sweetened coconut shreds
- One cup of chopped pineapple, either fresh or canned and drained
- Half a cup of chopped walnuts or pecans (optional)
Regarding the dressing:
- One cup of standard or Greek vanilla yogurt
- Half a cup of whipped topping, such as Cool Whip
- One spoonful of orange juice
- One teaspoon of optional orange zest
- One tablespoon of maple syrup or honey, adjusted to taste
Directions
Get the dressing ready:
- Combine the orange juice, honey, whipped topping, vanilla yogurt, and orange zest, if using, in a mixing dish. Blend until fully blended and smooth.
Mix the ingredients for the salad:
- Add the chopped nuts (if using), diced pineapple, shredded coconut, mini marshmallows, and mandarin oranges to a large bowl and gently fold to combine.
Put the dressing on:
- Drizzle the fruit mixture with the dressing, then carefully fold to coat everything.
Calm down:
- To let the flavors blend, cover and chill for at least one to two hours before serving.
