- 1 cup Raw Cashews
- 1 tsp Chaat Masala or Seasoning of your choice
- 1/2 tbsp Ghee or Cooking Oil

- Gather Ingredients. Melt Ghee in microwave.
- Transfer the cashews to the Air fryer basket in a single layer.
- Air fry at 360*f for about 7-8 minutes till they get nice Golden in color. If you want to keep them little pinkish, then air fry for 6 minutes. Shake these in between for even air frying.
- Take these air fryer roasted cashews in a mixing bowl. Add Chaat Masala or the seasoning of your choice (Cajun Spice Mix, Piri Piri spice Mix, salt & pepper, Pub Style, Ranch seasoning) while it’s hot. Mix with a fork.
- Cashews are soft when they are hot. They will harden up as they cool down. Don’t eat them while they are hot. It can burn your mouth.
- Serve these at room temperature. Or store these in air tight jar at the kitchen counter. They will last for good 3-4 weeks.
PRO-TIPS :
- Coating nuts with little ghee or oil helps them retain their sheen. Also it helps in making the seasoning stick to the nuts. Although you can skip using it or use very little amount.
- Please do not eat the nuts super hot or else it can burn your mouth.
- Make sure not to over-eat the nuts. It can be harmful. Always consult your doctor if you have dietary restrictions

Yes you can. Bake these at 350*f in the oven on a cookie tray. Make sure it keep the tray on the middle rack. Bake it for 8-10 minutes or till they are of desired color.
Can I roast these in IP Air fryer Lid?
Yes. Follow the same instructions as for Air fryer. Keep an eye since they might get done faster in the lid.
Is it possible to double the recipe?
You can double or triple the recipe. But you have to roast these in batches. Make sure not to over crowd the air fryer basket. Also 2nd and 3rd round of cashews might beet done faster since the air fryer is already very hot.
How to store roasted cashews?
Make sure to cool the Roasted Cashews to the room temperature before storing these. Once cooled down completely, store in air tight jar or container on the kitchen counter. Do not refrigerate the roasted cashews. These should last for 3-4 weeks.

As these are rich in flavor, they make an excellent Holiday gift for the friends and family.
You can also take these as Hostess Gift when visiting someone for dinner or a cocktail party. Just roast them, cool them, pack them in a beautiful box/jar and take these as gift.

You can add these to the curries and stir fries too. They enhance the texture & flavor of the dish.
How many cashews a day is advised for a healthy person?
It is advised to not exceed more than 28 grams of total nuts in a day. So weigh and consume.
Is it okay to eat raw Cashews?
Since cashews contain a substance known as urushiol, found in poison ivy, it is not advised to eat them raw. Roast them lightly before consuming.
What are the ingredients of Roasted Cashews in Air Fryer?
The main ingredient of this recipe is RAW CASHEWS.
Ghee or Cooking Oil – This adds nice sheen to the cashews. But you can choose to skip it.
Although I seasoned my recipe with Indian spices of Chaat Masala that is tangy & spicy, but you can choose the seasoning of your choice.
Some options to season Roasted Cashews
– Season these with Cajun Spice Mix..
– You can sprinkle these with some salt & pepper. Can never go wrong with that.
– Piri Piri spice Mix will work great. It’s a South African spice mix which is moderately spicy.
– Ranch seasoning would be awesome.
– Pub Style peanuts spice mix would enhance the flavors.
