Ingredients:
1 pre-made pie crust (or make your own if desired)
1 tablespoon olive oil or butter
1 cup fresh spinach, chopped (or ½ cup frozen, thawed and squeezed dry)
4 large eggs
½ cup milk (or half-and-half for creamier texture)
½ cup shredded cheese (cheddar, mozzarella, Swiss, or a mix)
Salt and pepper to taste
Optional: ¼ cup chopped onions, mushrooms, or bell peppers
Instructions:
Prep the Crust:
Roll out your pie crust into a small 6-inch air fryer-safe pie pan or ramekin.
Press it gently into place. Trim edges if needed.
Cook the Spinach:
Heat olive oil in a skillet over medium heat.
Add chopped spinach (and optional onions or mushrooms).
Sauté until wilted (about 2–3 minutes), then remove from heat.
Mix the Filling:
In a bowl, whisk together the eggs, milk, cheese, salt, and pepper.
