Ingredients:
1 tablespoon olive oil
1 medium onion, diced
2 cloves garlic, minced
2 medium carrots, diced
2 celery stalks, diced
1 medium potato, peeled and diced
1 zucchini, diced
1 yellow squash, diced
1 red bell pepper, diced
4 cups vegetable broth
1 (14.5 oz) can diced tomatoes
1 teaspoon dried thyme
1 teaspoon dried oregano
1 bay leaf
Salt and pepper, to taste

Instructions:
Sauté Vegetables:
Heat olive oil in a large pot or Dutch oven over medium heat. Add diced onion and cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute more, until fragrant.
