Easy Chicken Stroganoff in the Air Fryer

Easy Chicken Stroganoff in the Air Fryer

Table of Contents

Intro:

Chicken Stroganoff is a creamy, savory dish originally inspired by Russian beef stroganoff, but this lighter version uses chicken for a quicker, more budget-friendly meal. Using the air fryer to cook the chicken makes it juicy with minimal oil, while the sauce is prepared on the stovetop in under 10 minutes. Serve it over egg noodles, rice, or mashed potatoes for a hearty dinner that feels fancy without the fuss.

Prep Time: 10 minutes

Air Fry Chicken: 12–14 minutes

Sauce Cooking Time: 6–8 minutes

Ingredients (Serves 2–3)

For the Chicken:

2 boneless, skinless chicken breasts (or thighs)

1 tbsp olive oil

½ tsp salt

½ tsp black pepper

½ tsp garlic powder

1 tsp paprika (optional)

1 tsp dried parsley

For the Stroganoff Sauce:

1 tbsp butter

½ medium onion, finely chopped

1–2 garlic cloves, minced

1 cup sliced mushrooms (white or cremini)

½ cup chicken broth

½ cup sour cream (or Greek yogurt for a lighter option)

1 tsp Dijon mustard (optional but adds depth)

Salt and pepper to taste

Cook for 12–14 minutes, flipping halfway through, until golden and internal temp is 165°F (74°C).

Rest for 5 minutes, then slice or dice the chicken.

Prepare the Sauce (6–8 minutes, on stovetop)

In a skillet, melt butter over medium heat.

Add onions and sauté for 2 minutes.

Stir in garlic and mushrooms, cook for 3–4 minutes until soft and lightly browned.

Add chicken broth and bring to a simmer.

Stir in sour cream and Dijon mustard (if using). Do not boil.

If a thicker sauce is desired, mix cornstarch + water and stir in. Simmer 1–2 minutes more.

Add sliced/diced air-fried chicken into the sauce and stir to coat.

Combine and Serve

Spoon over warm egg noodles, mashed potatoes, or rice.

Garnish with chopped parsley.

Tips:

Use rotisserie chicken for an ultra-fast version (skip air fryer).

Add frozen peas or spinach in the last 2 minutes for a veggie boost.

Sour cream can be swapped with full-fat plain Greek yogurt for tang and creaminess.
