Easy Sheet Pan Shrimp Fajitas

Get ready to savor the bold flavors of Mexico with this incredibly easy and delicious Sheet Pan Shrimp Fajitas recipe! This one-pan wonder combines succulent shrimp, colorful bell peppers, onions, and fajita seasoning, all cooked to perfection on a single sheet pan.

 Total Time: 22-27 minutes

Ingredients:

1 lb raw shrimp, peeled and deveined

1 green bell pepper, sliced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

½ of a red onion, sliced

1 Tbsp + 1 tsp fajita seasoning (See below for my homemade fajita seasoning recipe)

Avocado oil spray (can be replaced with regular avocado oil or olive oil)

Instructions

Preheat oven to 400 degrees and line a large sheet pan with parchment paper.

Add the sliced bell peppers and onions to a bowl and spray them with your avocado oil spray (or drizzle with your oil) and toss them in 1 tsp fajita seasoning. Spread the veggies out on your sheet pan and bake them for 10 minutes.

Meanwhile, toss your shrimp in 1 Tbsp fajita seasoning. Once the veggies are done, place the shrimp on top of the peppers and onions and bake again for 6-8 minutes or until the shrimp are cooked all the way through.

Serve immediately with your favorite taco toppings!

Tips and Tricks

1. Use large shrimp for easier cooking: Large shrimp are easier to cook and less likely to overcook.
2. Don’t overcrowd the sheet pan: Cook the shrimp and vegetables in batches if necessary, to ensure they have enough room to cook evenly.

4. Serve with warm flour or corn tortillas: Warm tortillas are essential for wrapping up your fajita filling.
