This comforting Egg Roll Soup captures all the flavors of classic egg rolls—savory ground pork, cabbage, carrots, and aromatics—without the deep-frying. The air fryer is used to crisp up wonton strips for a crunchy topping, adding the perfect finishing touch!

Ingredients
For the Soup:
1 lb ground chicken/turkey
1 tablespoon sesame oil
3 cloves garlic, minced
1 teaspoon fresh ginger, grated
1 small onion, diced
4 cups chicken broth (low sodium)
2 tablespoons low-sodium soy sauce
1 tablespoon rice vinegar
1 teaspoon sriracha (optional, for heat)
2 cups green cabbage, shredded
1 cup carrots, julienned
½ teaspoon ground black pepper
½ teaspoon salt (adjust to taste)
1 green onion, sliced (for garnish)
For Air Fryer Crispy Wonton Strips:
6 wonton wrappers, cut into thin strips
½ tablespoon olive oil
¼ teaspoon salt
Instructions
Air Fry Crispy Wonton Strips
Preheat your air fryer to 350°F (175°C) for 3 minutes.
In a small bowl, toss wonton strips with olive oil and salt.
Arrange them in a single layer in the air fryer basket.
Air fry for 3-4 minutes, shaking halfway through, until golden and crispy.
Remove and set aside.
Make the Soup
Heat a large pot over medium heat and add sesame oil.
Add the ground chicken and cook for 5-6 minutes, breaking it apart until browned.
Stir in garlic, ginger, and onion, and cook for 2 minutes until fragrant.
Pour in chicken broth, soy sauce, rice vinegar, and sriracha (if using).
Bring to a simmer and cook for 5 minutes.
Add shredded cabbage, carrots, black pepper, and salt.
Simmer for another 5-7 minutes until veggies are tender.
Serve
Ladle the soup into bowls.
Top with crispy air-fried wonton strips.
