Egg Salad Sandwich
Creamy eggs on soft bread

Ingredients:
- 4 large eggs
- 2 tablespoons mayonnaise
- 1 teaspoon Dijon mustard (optional)
- Salt and pepper to taste
- 1 tablespoon fresh chives or green onions, chopped (optional)
- 4 slices of bread (your choice: whole wheat, white, or sourdough)
- Lettuce leaves (optional)
- Tomato slices (optional)
Instructions:
1. Place the eggs in a pot and cover them with water.
2. Bring to a boil over medium heat.
3. Once boiling, cover the pot, remove it from heat, and let it sit for about 10-12 minutes.
4. After that, transfer the eggs to a bowl of ice water to cool for a few minutes.
5. Once the eggs are cool, peel them and chop them into small pieces.
6. In a mixing bowl, combine the chopped eggs, mayonnaise, Dijon mustard (if using), salt, pepper, and chives or green onions.
7. Mix everything together until well combined.
8. Take two slices of bread and spread a generous amount of the egg salad mixture on one slice.
9. If desired, add lettuce and tomato slices before topping with the second slice of bread.
10. Cut the sandwich in half and serve immediately. You can also chill the egg salad in the fridge for about 30 minutes before serving if you prefer it cold.
