Elegant Crab and Shrimp Stuffed Salmon
For the stuffing:

- – 1/2 cup lump crab meat
- – 1/4 cup cream cheese, softened
- – 1/4 cup breadcrumbs
- – 1 tablespoon olive oil mayo
- – 1 teaspoon Dijon mustard
- – 1/2 teaspoon garlic powder
- – 1/2 teaspoon paprika
- – 1 tablespoon fresh parsley, chopped
- – Salt and pepper to taste
For the salmon:
- – 4 salmon fillets (6 oz each), skinless
- – 1 tablespoon olive oil
- – 1/2 teaspoon salt
- – 1/4 teaspoon black pepper
- – Lemon wedges, for serving
1. Prepare the stuffing:
– In a bowl, mix together shrimp, crab meat, cream cheese, breadcrumbs, mayonnaise, Dijon mustard, garlic powder, paprika, parsley, salt, and pepper. Set aside.
2. Prepare the salmon:
– Preheat your oven to 375°F (190°C).
– Cut a pocket in the center of each salmon fillet, being careful not to cut all the way through. Season the salmon with salt and pepper.
3. Stuff the salmon:
– Divide the stuffing evenly among the fillets and carefully fill the pockets. Use toothpicks to secure if necessary.
4. Sear the salmon:
– Heat olive oil in an oven-safe skillet over medium-high heat. Sear the stuffed salmon for 2-3 minutes per side until lightly browned.
5. Bake the salmon:
– Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through and the stuffing is warm.
6. Serve:
– Plate the salmon and serve with lemon wedges and your favorite sides, like steamed asparagus or wild rice.
