Energy-Boosting Nut and Seed Cookies
Ingredients:
- 1/2 cup dried apricots (85g), chopped
- 1/2 cup walnuts (50g), chopped
- 2/3 cup roasted salted peanuts (100g)
- 1/4 cup pumpkin seeds (30g)
- 1/3 cup sunflower seeds (30g)
- 1 tablespoon sesame seeds (10g)
- 1/3 cup almonds (50g), chopped
- 1 tablespoon poppy seeds (10g)
- 1 tablespoon flaxseeds (10g)
- 1 tablespoon honey (20g)
- 1 medium egg white (~25g)
Directions:
Preheat your oven to 180°C (350°F). Line a baking sheet with parchment paper.
In a large bowl, combine the chopped dried apricots, walnuts, peanuts, pumpkin seeds, sunflower seeds, sesame seeds, almonds, poppy seeds, and flaxseeds.
Add the honey and egg white to the mixture, and stir well until all ingredients are evenly coated.
Using a spoon or your hands, form the mixture into small balls and place them on the prepared baking sheet. Flatten each ball slightly with the back of a spoon.
Bake in the preheated oven for 12-15 minutes or until the cookies are golden brown.
Remove from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
