Energy-Boosting Nut and Seed Cookies
- Ingredients:
 
- 1/2 cup dried apricots (85g), chopped
- 1/2 cup walnuts (50g), chopped
- 2/3 cup roasted salted peanuts (100g)
 
- 1/4 cup pumpkin seeds (30g)
- 1/3 cup sunflower seeds (30g)
- 1 tablespoon sesame seeds (10g)
 
- 1/3 cup almonds (50g), chopped
- 1 tablespoon poppy seeds (10g)
- 1 tablespoon flaxseeds (10g)
 
- 1 tablespoon honey (20g)
- 1 medium egg white (~25g)
Directions:
- Preheat your oven to 180°C (350°F). Line a baking sheet with parchment paper.
- In a large bowl, combine the chopped dried apricots, walnuts, peanuts, pumpkin seeds, sunflower seeds, sesame seeds, almonds, poppy seeds, and flaxseeds.
- Add the honey and egg white to the mixture, and stir well until all ingredients are evenly coated.
- Using a spoon or your hands, form the mixture into small balls and place them on the prepared baking sheet. Flatten each ball slightly with the back of a spoon.
- Bake in the preheated oven for 12-15 minutes or until the cookies are golden brown.
- Remove from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
