This one-dish wonder is creamy, cheesy, and full of Southwest flavor. With a base of tender chicken, black beans, corn, and salsa, topped with bubbly cheese and crispy tortilla strips, it’s satisfying comfort food ready in under 30 minutes thanks to the air fryer.

Ingredients: (Serves 4)

 Main Casserole:

2 cups cooked, shredded chicken (rotisserie or pre-cooked)

1 cup cooked rice (white or brown)

1/2 cup black beans (rinsed & drained)

1/2 cup corn (fresh, frozen, or canned & drained)

1/2 cup salsa (medium or mild)

1/2 cup sour cream or Greek yogurt

1/2 cup shredded cheddar cheese

1/2 cup shredded Monterey Jack or Mexican blend cheese

1/2 tsp cumin

1/2 tsp chili powder

Salt & pepper to taste

Topping (Optional but Recommended):

1/4 cup crushed tortilla chips or tortilla strips

1/4 cup shredded cheese (for topping)

Chopped green onions or cilantro (for garnish)

Instructions:

Prepare the Filling:

In a large mixing bowl, combine:

Shredded chicken

Cooked rice

Black beans

Corn

Salsa

Sour cream

Half of both cheeses

Cumin, chili powder, salt, and pepper
Mix until everything is well-coated and creamy.

Assemble the Casserole:

Lightly grease an air fryer-safe baking dish (metal or silicone, approx. 6×6 inches or equivalent).

Pour in the chicken mixture and smooth the top.

Sprinkle remaining cheese over the top.

Air Fry:

Preheat air fryer to 350°F (175°C) for 2–3 minutes.

Place the casserole dish inside the basket.

Air fry for 10–12 minutes, until the cheese is melted and bubbly, and the center is heated through.

 If using a deeper dish or doubling the recipe, increase time to 14–15 minutes and cover loosely with foil halfway to prevent over-browning.

Add the Crunch (Optional):

After the casserole is cooked, sprinkle crushed tortilla chips or strips on top.

Return to the air fryer for 2 more minutes for a golden crunch.
